Our favorite variation of the classic paloma is the Paloma La Matera. This recipe comes from our friends at La Matera, an Argentinian restaurant in Guadalajara, Mexico. We've dined there on numerous occasions as a team, and we can't recommend it highly enough. Add La Matera to your Guadalajara travel itinerary and be sure to enjoy one of their palomas. The La Matera Mate Paloma Recipe
INGREDIENTS
- 2 oz Wild Common Still Strength Tequila Blanco
- 2oz Mate Concentrate*
- 2oz Grapefruit Juice (freshest squeezed possible)
- 0.5oz agave nectar
YERBA MATE CONCENTRATE
- 60 grams yerba mate
- Add to 1 liter of filtered water
- Leave to macerate for 2 hours
- Strain and keep refrigerated at least 24 hours before serving
PREPARATION
- Combine ingredients in a cocktail shaker
- Add crushed ice and shake
- Strain and serve over ice in a mate gourd or a rocks glass
- Enjoy!
